Mac and cheese, the ultimate beloved comfort food. However, not all mac and cheese is created equal. Sometimes there's a sprinkle of crispy breadcrumbs atop, sometimes there's a hint of smokey bacon mixed in for added flavor. Regardless the assembly of choice, all mac and cheese is united by one quite obvious key ingredient: melted cheese.

Today we've introduced a new video series called Web's Favorite Recipes and our kick off episode just happens to involve, you guessed it, Mac and Cheese. Definitely make sure to check out our quick and easy recipe.

Anyway, there are almost too many ways to make mac n’ cheese, and it’s basically impossible to go wrong. So, before cooking, start by narrowing down the cheese options. You’ve got your tangy and your creamy, there’s the thick and then the steamy, not to forget the baked and of course the stringy. How do you like your mac and cheese?

If creamy is what you crave, stick to cheeses that are either soft or crumbly at room temperature. When melted these cheeses will turn more into a milky sauce rather than a thick, stringy cheese topping. Goat cheese and Boursin can soften and spice up your average cheddar when mixed with some Parmesan and pepper. Parmesan, when added to milk and chicken broth, can also stand alone to create a lighter, thinner cheese sauce. Blue cheese and feta, when melted down, will add a sharp bite to your dish. Gruyere, fontina, and Gouda can all be mixed with Dijon mustard to create a great tangy dish.

To get a more stringy, baked dish, you’ll want to sprinkle more cheese on top of the casserole and then stick it in the oven. Great cheeses for melting on top are mozzarella, Monterey jack, white cheddar, and of course sharp yellow cheddar.

To put it simply, you can combine cheddar with practically any cheese you find in your fridge and it will work, or you can omit the cheddar and try something completely different. So, go scour through your fridge and create your ideal mac and cheese.
