There's no way to know what's lurking in that vat of French fry oil. Probably nothing you would want to know about anyway. However, starting in about three weeks (January 1, 2010), Gov. Schwarzenegger's anti-trans fat bill takes effect banning all California restaurants from cooking with trans fat oils. Yay! Trans fats, long linked to a variety of health problems including heart disease and obesity, are manufactured processed fats (trace amounts can occur naturally in some meat and dairy products) that when added to oil extend its shelf life. California restaurants and other food facilities have until the end of the year to eliminate trans fats from their menu and make the switch to healthier cooking oil. [Good Bite]
