I cook. A lot. I also consider myself a pretty good cook, but that doesn't exempt me, or even a professional chef for that matter, from kitchen mishaps. Perfect example, just a week ago, on a Friday night, I was cooking dinner for a friend and attempted to shower and get ready to go out all in about an hours time. One of my dishes was a quinoa, parsley, lemon, Parmesan creation, and I accidentally added too much water to the quinoa and ended up overcooking it. Ugh. I've also over salted dishes in the past (ironically I cook with very little salt), overcooked meat, there are a million ways to screw something up, even for an experienced cook. It just happens. 

 

Real Simple has published an article titled "Easy Fixes for 8 Common Kitchen Mishaps," the first of which is a tip for overcooked potatoes. have you ever boiled potatoes a bit too long and the potatoes have basically turned to mush? Real Simple suggests turning those potatoes into mashed potatoes, what a great idea! Another fantastic idea, and crowd-pleasing dish, is to take those smushed potatoes and lay them out on a baking dish. Add olive oil and sprinkle with salt and pepper. Roast in the over about 25 minutes until potatoes are brown and crispy on the outside. Serve as is, or add your favorite cheese and return to the oven for another 5 minutes to melt.
