About a month ago I was in Washington D.C. and had the opportunity to brunch at a terrific place called Ulah. The brunch menu is extensive and it took my party at least twenty minutes to make our final decisions. The most unusual dish ordered by far was the Peanut Butter Banana Delight Brunch Sandwich.
Now peanut butter and banana is not an unheard of combination, but the addition of bacon was something I had not seen before. When we asked our waiter what he thought of the dish he said, “Well Elvis liked them.†And back at home in Queens, I set to work.

Ingredients:
chunky peanut butter
bacon
honeyripe bananas butter for cooking

Heat up your skillet or grill pan. Cook bacon until crispy. Remove from heat and blot with paper towel. Spread peanut butter over one side of bread. Layer with sliced banana and cooked bacon. Drizzle with honey. Top with other bread slice, butter both sides of bread and add to skillet. Brown one side of bread and flip, pressing with spatula. When the bread has reached your desired doneness, about 5-7 minutes on each side, take off, slice and enjoy!
