
Today we aired a wonderful recipe for light-as-air pancakes, aka Fluffy Pancakes, created by our host Gaby Dalkin. And sure, this recipe is quick and easy, but if you're looking for an even faster way to get breakfast on the table, you might want to consider making a homemade pancake mix that you can store in the pantry and break out when breakfast cravings kick in. Ingredients
1 ½ cups all-purpose flour
½ teaspoon salt
3 ½ teaspoons baking powder
1 tablespoon white sugar
1 ¼ cups milk
1 egg
1 teaspoon vanilla extract
3 tablespoons melted butter
Sift the flour, salt, baking powder and sugar into a large mixing bowl. Create a cavity in the center of the dry ingredients and pour in the milk, egg, vanilla and butter. Mix the ingredients until you have a smooth consistency.
Heat a lightly oiled frying pan over medium/high heat. Then, pour about ¼ cup of the pancake batter for each pancake onto the frying pan and heat until both sides of the pancake are brown.
Don't forget, you can get creative by adding your favorite fruit or candy into the batter like blueberries or chocolate chips. -Paige Ross
