
Today's featured video explores the wonders of classic Mac and Cheese. Since mac and cheese is generally made in larger quantities baked into pans, we often find ourselves with a fair amount of mac and cheese leftover. What to do with this extra mac and cheese? You can always pawn it off on a neighbor, but an even better idea is to repurpose that mac and cheese into lunch and dinner the following day.
1. Using the extra mac and cheese, place a scoop atop two thin slices of flank or skirt steak and top with sautéed peppers and onions to enjoy a bun-less Philly cheese steak stack.
2. Another great way to reinvent this dish is to add about 1/3 of a cup chicken broth to the mac and cheese to moisten and thin it out. To this add two generous handfuls of fresh spinach and mix until the spinach has wilted. Feel free to add any extra vegetables you have on hand to introduce extra nutrients, flavor, and texture to the mac and cheese.
3. Taking a different spin on the popular broccoli cheddar combination, mix your leftover mac and cheese with steamed broccoli and grilled chicken for another delicious remix of this American classic.
4. Pizza! Have you ever had pasta on pizza? You can either make your very own pizza, or simply pile the mac and cheese atop a frozen pizza and voila!
5. Lastly, this is a take on arancini, or Italian rice balls. Scoop your mac and cheese with an ice cream scooper then roll in bread crumbs. Fry in olive oil and you have your very own mac and cheese ball snack!
