As you may have already noticed, we've devoted this week's video pod and a large portion of The Dish to 'Lazy Dinners.' For us, lazy dinner means recipes that can be made quickly, easily and with few ingredients, but are still delicious, satisfying and healthy. These dinners aren't just about feeding yourself in a rush, with as little effort as possible, they're about making something you'll actually enjoy--even on the evenings you don't feel up to it. This week epitomizes those nights for us: we spent the weekend cooking and entertaining guests, we were out in the sun too long, and it's getting hotter. All we want to do is eat out! Unfortunately, the economy doesn't really allow for that at the moment. It's also not always the healthiest option. Plus, we enjoy cooking at home (we do work at a food site after all). We just can't bare the thought of spending an hour chopping and sauteing in a hot kitchen after a long day of work... let alone cleaning a stack of dishes. This is when we're especially grateful for the plethora of simple dinner ideas available across the web.
