Why do people love brunch? Because you can basically get away with serving anything from steak to pancakes. Earlier this week we ran an Ultimate Brunch video offering up a slew of fun entertaining options like Krispy Kreme Bread Pudding (you will be the star of the party with this one!) and a Raspberry Herb Champagne Cocktail, an elegant way to start off the morning. So, if you're going to serve up these ultimate brunch dishes, then why not add one more to the list? How about...mac and cheese? How about...lobster? How about..lobster mac and cheese? Oh yes. Once again, you will be the star of the party!

This lobster mac and cheese recipe hails from Easy Street at The Sky Lodge in Park City Utah and combines cheesy, creamy goodness with fresh chopped lobster tail. A fantastic, crowd-pleasing spin on the traditional comfort dish, and best part yet, super simple to prepare!

Lobster Mac and Cheese

8 ounce heavy cream
½ teaspoon fresh thyme, chopped
4 ounce Bee Hive Promontory white cheddar cheese, grated or other white cheddar
kosher salt
ground white pepper
14 ounces penne pasta, cooked
4 tablespoons butter
6 ounce lobster tail meat, diced
1 pinch fresh Italian flat leaf parsley, chopped
1 ounce Dubonnet Blanc*
¼ cup yellow tomato, diced
¼ cup red tomato, diced
1 tablespoon green onion

Add cream to medium skillet and cook over medium heat until reduced by 1/3. Add thyme, cheddar, and season to taste with salt and pepper. Add pasta to sauce and mix. Remove from heat and set aside.

  1. In a separate skillet add butter and lobster and and cook until butter turns golden brown. Add parsley and pinch of thyme. Add Dubonnet Blanc, mix, and remove from heat. 
  2. Transfer pasta to bowl and in the center add lobster. Add tomatoes around lobster, followed by green onion around the tomatoes and serve. 

 

NOTES

*An aperitif wine. If unavailable substitute in white wine.
