Mussels Steamed in Tomato-White Wine Sauce
Serves 1
4 tablespoons olive oil
1/2 pound PEI mussels
1 tablespoon chopped fresh garlic
1 tablespoon chopped shallots
1/2 tablespoon chopped rosemary
3 anchovies
1 teaspoon chili flakes
2/3 cup dry white wine
1 cup fish stock
1 cup tomato sauce
1 tablespoon chopped parsley
salt and pepper to taste
2 slices toasted baguette
2 tablespoons unsalted butter
In a 10-inch skillet add oil over medium heat. Add mussels, garlic, shallots, rosemary, anchovies and dry chili flakes and cook until the garlic and shallots have caramelized, about 3 minutes. Deglaze the pan with white wine, reduce by half, add the fish stock, followed by the tomato sauce, parsley, and salt. Lower heat to medium and simmer mixture, cooking until the mussels have opened (if the sauce reduces too much add more fish stock). Taste and check the seasoning, adding more salt if needed.
While the mussels are cooking slice baguette on an angle, brush with olive oil, dust with salt and pepper and grill. Once mussels are cooked add butter, mix. Transfer mussels to bowl, top with grilled baguette, and serve.
