
Today Nisrine Merzouki of Dinners & Dreams shares a super fast Moroccan couscous recipe. For anyone unfamiliar with couscous, it's a tiny grain made from semolina, almost like tiny tiny pasta granules. The grains are traditional steamed and served plain or flavored with a wide array of spices and ingredients. This recipe calls for traditional Moroccan flavors, cinnamon and orange.
Orange-Flavored Couscous Salad with Cranberries and Pine Nuts
Serves 4
1 cup water
1/4 teaspoon salt
1 teaspoon butter
1 cup instant couscous
1/2 cup dried cranberries
1/2 cup pine nuts
Salt and freshly ground pepper, to taste
1/4 teaspoon ground cinnamon
½ teaspoon grated orange zest
3 tablespoons plain yogurt
1/4 cup orange juice
1 teaspoon confectioner’s sugar, for garnish
A few mint leaves, for garnish
Bring the water to a boil. Add the salt, butter, and couscous. Remove from heat. Cover and let stand 5 minutes.
Fluff the couscous with a fork. Add the cranberries, pine nuts, salt and pepper and cinnamon. In a separate bowl, whisk together the orange zest, yogurt and orange juice. Slowly pour the liquid mixture into the couscous. Toss to combine. Serve the couscous warm, cold, or at room temperature garnished with confectioner’s sugar and mint leaves.
