I've been eating Indian food since age 0 because my parents are obsessed with it. In both restaurants and at home, my dad cooked a ton of Indian fare, and because I have such a sweet tooth, I've always been drawn to Indian desserts. I do know a fair amount about Indian cuisine for those reasons, so I was totally blown away when I tried a new Indian dessert recently that I had never sampled before. 

It comes from a local restaurant in Beverly Hills called Nirvana, a surprisingly delicious lounge cum restaurant serving great Indian fare. So, what's this dessert? It's called Carrot Halwa, almost like a thick, sweet carrot pudding made with evaporated milk (popular ingredient in many Indian desserts), obviously carrots, cardamom and pistachios. It's AMAZING and so easy!. The overall impression is this super creamy, slightly carroty flan-esque dessert spiked with a hint of cardamom and topped with pistachios, delish! I absolutely can't wait to try this one at home!

 

Carrot Halwa

 

1 liter milk
4/5 cup dried milk powder 
3 tbs ghee (clarified butter)
1 3/4 cups sugar
1 tsp cardamom seeds.
2 tablespoons crushed pistachios (optional)
 
Boil the carrots and milk in pan over low heat until milk is absorbed. Add sugar, cardamom, and milk powder. Cook 5 minutes.
Add ghee to sautee pan and cook over medium heat. Add carrot mixture and raise heat to high. Cook until mixture turns golden brown, place in mold or on plate and top with crushed pistachios.
