The day has arrived. Today you are cooking dinner, and not just dinner party dinner but Thanksgiving Day dinner, for a rowdy (or maybe not rowdy) group of 15 plus. Ah!! Don't stress because you can handle it. Even if this is your first year hosting, it will all work out, everybody will get fed (well), even the dog. We at Good Bite thought you might need some last minute advice, so below a few helpful hints to avoid a kitchen battle zone. If you can make it in advance, do it. So, you stuff the bird and then make a mad dash for a needle of sorts to sew all the good stuff in, but somewhere along the way, without fail, much of the stuffing creeps its way out. This year, when attempting the feat, make sure you have a sous chef on hand to hold the bird upright as you sew it shut to avoid spillage. How much stuffing to make. Estimate about 1/2-3/4 cup per guest. You can always repurpose leftover in an omelet the following morning. If you've decided on a last minute brine, check to see if your turkey is kosher. Kosher birds come pre-brined so that will save you a step right off the bat. Find hidden space. Oven space and stove burners are always in high demand so keep foods warm by storing in the microwave or place on a low-burning outdoor grill with the cover shut. If for some bizarre reason you can't find fresh cranberries (perhaps they are sold out) at your local market, grab dried cranberries. For each cup of fresh berries sub in 3/4 cup of dried. And remember, if you feed your guests enough wine, everything will be okay.
