Everybody at the Good Bite office is lucky to be based in sunny Santa Monica, CA and even luckier to be across the street from the beach and literally a stones throw from one of LA's biggest farmers markets, the Wednesday Santa Monica Farmers Market. In celebration of this wonderful market offering even more wonderful seasonal veggies, fruit, nuts, farm-fresh eggs, milk, cheese, and tons more, we've added this weekly column sprouting every Wednesday morning. What's in Season This Week? offers a look at the goods local farmers are harvesting right now, in addition to recipe suggestions to get you cooking. Like pomegranate, butternut squash seems to be another one of those seasonal fruits/veggies that everyone loves. It probably has to do with the fact that good butternut squash can be sweet like candy, so essentially eating it for dinner is really like eating dessert for dinner (a great veggie to feed the kids!). No complaints here.

We, at Good Bite, love butternut squash not only because of its amazing caramel, earthy, nutty flavor, but also because it's a wonderfully versatile vegetable. It works in both sweet and savories, the possibilities are endless. And, it can take literally about 60 seconds to prepare. Merely slice the squash in half lengthwise, scoops out the seeds, add a dollop of butter, and roast for about 35 minutes. Done!
