Feta, Mint, and Watermelon Skewers
Serves 6 to 8
2 small watermelons
1 Package of Feta Cheese
1 package fresh mint leaves
1 package skewers
Canola or vegetable oil
Cut 1 seedless watermelon into small cubes (no bigger than 1â€). Reserve other watermelon for presentation
Cut Feta into small cubes (no bigger than 1â€) ** cut with wet knife to keep cheese from crumbling. Clean, separate and dry mint leaves
Slice off the round end of presentation watermelon, so it stands upright. Run watermelon with canola or vegetable oil. This is will give it a nice shine. On bamboo (or other decorative) skewer, place cube of feta, cube of watermelon & top with mint leaf. Pierce skewers decoratively into watermelon and arrange.
