Roasted Pork Tenderloin
4 tablespoons extra-virgin olive oil
1 pound pork tenderloin
1 tablespoon smoked paprika
4 garlic cloves
1 pound baby potatoes
10 ounces trimmed green beans
1 tablespoon chopped oregano
Stir olive oil, smoked paprika and (pressed) garlic in large bowl.
Brush a pork tenderloin with smoked paprika mixture and place on a large, lightly oiled baking pan.
Add potatoes to bowl (with smoked paprika mixture) and toss to coat. Arrange potatoes around pork on pan and sprinkle with salt and pepper.
Roast in 450ºF oven until pork is almost cooked, stirring potatoes once or twice, about 15 minutes.
Stir green beans in same bowl (see, you only dirty ONE bowl and ONE pan) with 1 tablespoon olive oil. Add green beans to roasting pan, alongside the potatoes and roast until pork is cooked (registers 140ºF on instant-read), potatoes are tender and browned and green onions are crisp-tender, about 5 minutes longer.
Transfer pork, potatoes and green beans to platter and sprinkle with chopped fresh oregano OR parsley.
