Good Bite Says: Fresh beets and beets from a can are two totally separate animals. Fresh roasted or boiled beets can be sweet like candy and as an added benefit are exceptionally healthy, jam-packed with tons of antioxidants. The general rule for veggies is the darker the color the healthier the veg, so pomegranate, beets, dark greens like kale, collared greens- all super good for you. Anyway, back to beets. The orange flavor in this salad perfectly compliments the beets with a slight bite from the watercress and nutty earthiness from the walnuts. This salad is so tasty you won't believe it's healthy too!
Citrus Beet Salad
Serves 4 to 6
2 tbsp chopped shallots
1 tsp Dijon mustard
1/4 cup freshly squeezed orange juice
salt
freshly cracked pepper
1 tsp champagne vinegar
3 tbsp extra virgin olive oil
6-8 fresh beets, cooked
2 oranges, segmented
bunch watercress
¼ c. goat cheese
¼ c. toasted walnuts
1 tbsp. fresh mint
Start with freshly squeezed orange juice. Add shallots, Dijon, salt, and pepper. Add splash of champagne vinegar and whisk. While whisking, add 3 tbsp of extra virgin olive oil. Slice beets. Add segmented oranges to sliced beets. Toss with about half of the vinaigrette. Toss watercress in vinaigrette. Arrange beets and oranges on top of greens. Add toasted walnuts and goat cheese. Top off with fresh mint.
