Mediterranean Shrimp with Lime, Feta & Mint
4 servings
1 pound shrimp, peeled, deveined, tails on
2 tablespoons good olive oil
2 tablespoons flat-leaf parsley, chopped
2 cloves garlic, minced
Zest and juice of 1 lime
Kosher salt & freshly cracked black pepper, to taste
2 ounces good feta cheese, crumbled
2 tablespoons fresh mint leaves, chiffonade
Lime wedges, for garnish
Preheat grill pan or outdoor grill to high.
In a large bowl, combine olive oil, parsley, garlic, lime zest, salt and pepper. Toss shrimp to coat thoroughly.
Grill shrimp until pink, opaque and curled in on themselves, about 2 minutes per side.
Remove shrimp to a serving platter and spritz with lime juice. Top with feta and shower with mint. Dig in!
