The sweet and savory dish's name pretty much sums it up: It's super simple, features one of our favorite ingredients, and can be made for $10. Curry powder, granny smith apples, and Greek yogurt, lend a unique, bold taste to the easy recipe. Serve it over a bed of greens, on a whole grain bread, or as a wrap. You can't go wrong with this healthy, versatile salad.
Ingredients
4 chicken breasts, poached
2 granny smith apples, chopped
½ cup (or less) of plain, low-fat Greek yogurt
½ cup red onions, finely chopped
20 pistachios, chopped
Curry powder, to taste
Salt and pepper, to taste
Butter lettuce
Poach chicken by simmering in shallow pan of water for 6-8 minutes, let cool. Shred chicken breasts. In medium bowl, combine chicken and apples. Add yogurt, until chicken is saturated, not soggy! Season with curry powder, and salt and pepper, as desired.
Wrap salad in lettuce leafs, sprinkle with pistachios to garnish.
