Jesse Brune of goodbite.com demonstrates his quick recipe for Tilapia En Papiotte. Tilapia is a great fish for even the pickiest eaters.
Ingredients
2 tilapia filets
1 clove garlic, chopped fine
1/4 sweet onion, thinly sliced
1/4 cup green olives, pitted
1/2 red pepper, thinly sliced
juice from 1/2 lemon
2 thin lemon slices
salt and pepper
1 tbsp organic butter
1 sprig fresh rosemary
2 pieces of parchment paper, cut into even squares 12" by 12"
Pre-heat oven to 375°F. Season fish with lemon juice, salt, and pepper. Rub fish with chopped garlic and set aside. Rub one side of each parchment square with butter. Lay the filets in the middle of one piece of parchment. Place the remaining ingredients on top of the fish. Top with the remaining piece of parchment and fold the edges of the parchment together, every edge should be systematically folded about 3-4 times each. Place the parchment-wrapped fish in the center of a small sheet-tray, and transfer to oven. Cook 10-12 minutes until fish is cooked through. Remove from oven and carefully place parchment pocket on place. Slice the center of the pocket twice, creating an "X" shape. Peel edges of parchment to the side slightly, revealing food. Steam should release. Add a sprig of fresh rosemary to garnish, serve in parchment pocket on plate.
