We love the chickpea, and blending this with spinach for a one dish dinner makes our mouth water. This is a quick, healthy and tasty dish that in a matter of minutes delivers a hot meal to the table. Ingredients
Olive Oil
1 tps Garlic
1 Can Chickpeas
1 bag fresh spinach
Fresh Lemon Juice
Salt & Pepper
Poached Egg
STEP 1 Slice garlic into thin slices. Put 1 tbsp of olive oil in a cast iron and sauté garlic.
STEP 2 Add chickpeas and cook until warmed through. Add a bag of fresh spinach.
STEP 3 Once wilted add salt and pepper and lemon juice. Poached egg optional.
