Halibut Pesto Kabobs
1 pound halibut cut into 1-inch thick cubes
1 cup bell pepper cut into 1-inch thick pieces
1 cup cherry tomatoes
1/2 cup pesto
Place halibut, bell peppers, and tomatoes in bowl. Pour pesto atop and mix. Skewer halibut, bell peppers, and tomatoes alternating to create a colorful skewer. Arrange skewers on rimmed baking sheet and broil for 6 minutes total, turning after 3 minutes. Serve!
