We get it. But, a wholesome, healthy meal doesn't have to take hours, or even an hour. How about just 15 minutes? That's even faster than take-out!
Our new series will literally show you how to get dinner on the table in less than 15 minutes using fresh, healthful ingredients. Roasted Salmon and Asparagus
Serves 1-2
1 bunch asparagus (about 15 spears)
2 tablespoons olive oil
12 ounce salmon fillet
2 tablespoons pesto
Preheat oven to 425°F. Wash asparagus and place on baking sheet. Pour olive oil atop and toss to coat. Position half the asparagus on each end of the baking sheet and place salmon fillet in the middle. Spread pesto atop. Transfer baking sheet to oven and bake about 10 minutes until fish is cooked through and asparagus is crisp-tender. Serve immediately.
