Sara Wells of ourbestbites.com demonstrates her quick recipe for a Smoked Sausage Sandwich. This crowd pleaser will be on the table in less than 15 minutes.
4 six inch hoagie rolls
12 ounces smoked sausage, sliced into 1/4" pieces
1 red bell pepper
1 small onion
4 slices provolone cheese
3 Tbs plus 1 tsp olive oil, divided
1/4 tsp kosher salt
1/8 tsp black pepper
Cook sausage in a medium sized skillet over medium-high heat for 2-3 minutes or until lightly browned. Remove from pan and cover to keep warm. Add 1 tsp olive oil to pan and add peppers, onions, salt, and pepper. Saute for 5-7 minutes until vegetables are tender. While peppers and onions are cooking slice rolls open and brush each surface lightly with remaining olive oil. Place under broiler until lightly browned. When vegetables are tender, add sausage back to pan to heat through. Divide mixture between 4 rolls and top each with provolone cheese. Place under boiler once more to melt cheese.
