This week, Paula Deen is on the lookout for fabulous side dish recipes using Philadelphia Cream Cheese for the Real Women of Philadelphia which inspired Andrea Meyers of AndreasRecipes.com to create her own side dish for the Good Bite community. Andrea says: Creamed spinach is one of our favorite comfort foods and an easy way to get our boys to eat this healthy vegetable. We like to spice it up a little with some chili powder, which you can adjust to your taste. Adding cream cheese gives this dish a rich texture.
Creamed Spinach
3 tablespoons unsalted butter
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon chili powder
2 pounds fresh spinach, washed, patted dry, and stemmed
1/4 teaspoon sea salt fresh ground black pepper
4 ounces Philadelphia Cream Cheese, cut into small cubes (Tested with both light and regular cream cheese, both work fine.)
3/4 cup lowfat milk
1/2 cup grated sharp cheddar cheese
