Aarti's Hot Dogs a la Rose

Aarti Says: "This is a funny old recipe, originally created by my mum (Rose), as a fun little treat when my dad went away on business -- that meant we got a break from the steady curry-and-rice regime, and our days were often filled with pizza, burgers and this wonderfully goofy, yet DELICIOUS dish. I love it because it comes together in minutes, and you can be sure that you'll always have some of the ingredients on hand: hot dogs, ketchup, onions and tomatoes. Plus, it's a great way to sneak new "exotic" spices into your repertoire. Sliced into pretty rounds, the hot dogs even look a little elegant, don't you think? It's great stuffed into a pita pocket, alongside a crisp, green salad."

Yield 4-6 servings

Prep Time 30 mins.

Ingredients

  • 1 large onion, diced
  • 4 garlic cloves, peeled, sliced thinly
  • 1 1/2 tbsp fresh ginger, minced
  • 1 handful shredded carrots (optional)
  • 1 tsp turmeric
  • 1/4 tsp garam masala
  • 1 tsp paprika
  • 1/2 tsp pimenton aka smoked paprika (optional)
  • 1 large tomato, diced
  • 1/8 cup ketchup
  • 1 pkg hot dogs, sliced about 1/16" thick (I like Hebrew National; you can choose whether you like chicken, turkey or beef. Trader Joes also has some Niman Ranch ones that I used today, which are awesome)
  • Handful of cilantro, minced

Directions

Step 1
Set a large nonstick skillet over medium heat, swirling 1 tbsp canola oil until shimmering. Add onions, garlic, ginger and carrots, seasoning with salt and pepper. Saute until softened and slightly brown around the edges.


Step 2
Add turmeric, garam masala and paprika', quickly stirring for about 20 seconds to keep the spices from burning. Add tomatoes and stir. Cook until the mixture turns mushy. Add ketchup, and taste for seasoning, adding more salt and pepper if needed. Cook 5 minutes.


Step 3
Add hot dog rounds, stirring to cover with tomato mixture. Add 1/4 cup water if the mixture is too dry and cover. Simmer over medium-low heat 15 minutes. Taste and season accordingly. Off heat, stir in cilantro. Serve!
