Shauna's Chickpeas and Spinach Fry

We love the chickpea, and blending this with spinach for a one dish dinner makes our mouth water. This is a quick, healthy and tasty dish that in a matter of minutes delivers a hot meal to the table. While tasty and flavorful by itself, it can also be spruced up with additional ingredients, such as a poached egg. Let us know what you like to add to this quick and easy dish.
Yield 2-4 servings
Prep Time 15 mins.
Ingredients
- Olive Oil
- 1 tsp. Garlic
- 1 can Chickpeas
- 1 bag Fresh Spinach
- Fresh Lemon Juice
- Salt & Pepper
- Poached Egg
Directions
Step 1Slice garlic into thin slices. Put 1 tbsp of olive oil in a cast iron and sauté garlic.
Step 2
Add chickpeas and cook until warmed through. Add a bag of fresh spinach.
Step 3
Once wilted add salt and pepper and lemon juice.
Notes

This looks great! I love the poached egg on top and I need to try sliced garlic more often. I love garlic, so why be afraid of it?

I make a version of this, too, but with a handful of cubed serrano ham tossed into the pan while everything cooks. I first had it this way in Spain. The ham adds a delicious, smoky/salty flavor.

I make essentially this same thing with chili and cumin. Most of the time I use frozen spinach simply because I'm guaranteed to have it, and I like the way it clings to the beans. And I fry my egg because well, fat is good.

I tried this last night. My husband and I thought it was bland. So I threw it back in the pan and added some chili and cumin. Much better than the original recipe provided by contributor. Thanks for the idea though.

I made this tonight and loved it. I did take @meleyna's suggestion and added cumin and red pepper flakes. also, did a fried egg instead of poached b/c i have no clue how to poach an egg. maybe that could have been part of the video.

cooked this last night. awesome. tried the fired egg like krystabaug suggested. needed bread though. that would have made it perfect.

Love this idea! I do something very similar, and add a bit of cumin, and a little fresh Mexican chorizo....such a perfect dinner, with a poached egg on top!
