Tracy Says: "It’s Africa-hot and you’re hungry for a little nosh… how about some potato skins? Um, gross. I know what you want. You want something crisp, bright and refreshing, that’ll keep you looking good in your bikini. Allow me to introduce you to your new favorite summer treat… it’s a little bit salty, a little bit sweet and totally yummy: Watermelon & feta skewers!"

Yield 4-15 servings

Prep Time 25 mins.

Ingredients

  • Large seedless watermelon
  • 2-3 packages of feta cheese
  • 1 bunch fresh mint leaves
  • 1 small watermelon, for decoration
  • 1 Tbs vegetable oil
  • Decorative skewers

Directions

Step 1
Cut large watermelon into small cubes (no bigger than 1”). Cut feta into small cubes (no bigger than 1”). Use wet knife to keep cheese from crumbling. Clean, separate and dry mint leaves. Cut ¼” off one side of small watermelon to keep melon from rolling around.

Step 2
On bamboo (or other decorative) skewers, place feta, watermelon, and mint leaf.

Step 3
Stick skewers in watermelon. Mince mint leaves and sprinkle on plate.

Fun idea! Seems like a really simple idea for a summer pot luck that will inspire a lot of oohs and aaahs from guests.

Great idea, I love feta with watermelon. Thinking of making this for July 4th only smaller chunks and blueberries too.
