Spice up that regular cheese with this trio melt. Mozzarella adds the creaminess, fontina imparts a slight nutty flavor, while the goat cheese ties it all together with a little tartness. This is not your average grilled cheese.
½ cup olive oil
2 garlic cloves
2 rosemary sprigs
2 thyme sprigs
1/8 teaspoon red pepper flakes or more to taste
2 slices French bread
¼ cup shredded mozzarella
¼ cup shredded fontina
2 tablespoons goat cheese
Pour olive oil into cold pan. Heat over low flame. Add garlic cloves, rosemary, thyme, and red pepper flakes. Simmer until garlic and herbs are infused well with oil, about 7 minutes. Brush separate skillet with 1 tablespoon garlic-infused olive oil. Liberally brush bread with garlic infused olive oil. Place first slice of bread into skillet. Top with mozzarella, fontina, and goat cheese. Brush final piece of bread with more oil and place on top of sandwich. Grill until cheese has melted and bread is crusty, about 4 minutes per side.
