Sweet 'N Smoky Collard Greens
Prep collard greens by washing and tearing leaves from stems into fork-friendly pieces. Heat a stock pot to medium-high and add bacon. Cook until brown and toasty and remove from pot. Place on paper towel. Add garlic to pan and then collards on top. Cook for 1 minute, stir, and then add water. Cover pot and cook for 3-5 minutes, stirring occasionally until collards are tender. Season with salt, pepper, and cayenne. Stir in dates, bacon, and maple syrup. Serves 4.
