A Brine is a solution of Water, Salt and Sugar. There are a ton of recipes out there for fantastic brines. But we love Laura Levy's recipe-- it's not only simple but it's bursting with flavor. Happy Thanksgiving!
Thanksgiving Turkey Brine
Brine:
Combine all ingredients, except ice in 4 qt. sauce pan. Bring to a boil and turn off. Add ice and let thoroughly cool in the refrigerator. Submerge turkey in brine – in well-sealed container. Allow to soak in brine for 8-12 hours.
Alternate simple brine:
Pour salt, sugar and pepper into 1 gallon of water. Stir until totally dissolved. Using a turkey brine bag or strong garbage bag – place turkey in bag and pour brine over it so it is completely submerged. Place in refrigerator and allow to soak for 24 hours.
Basting recipe:
Melt butting in maple syrup over low heat. Once turkey has been the oven for at least 10-15 minutes, slowly pour butter/syrup over the bird and spread with a basting brush. Baste about every 30 minutes to get a beautiful glaze on the bird.
