Planned overs of any kind! I make a pot of soup or a casserole on the weekend and it's good for a meal or two during the week. My other go-to meal is eggs...usually a fritatta.

Carne Guisada - My recipe is so easy but everyone thinks I knocked myself out preparing it! I love the simmer time, it allows me to play with my 4 year old! :D

My kids LOVE it when we have breakfast for dinner!! French toast, eggs, and Bacon!! It's quick and easy and there are NEVER leftovers

Freshly made chicken 'fingers'; dip pounded chicken breast strips in egg and seasoned breadcrumbs. Saute in Olive oil mixed with a little butter (for browning). Saute one side, after flipping, sprinkle a little parmesan cheese on top, letting it melt while the other side cooks. Serve with a mixture of chopped cherry tomatoes, basil chiffonade, garlic and diced fresh mozzarella.

Our favorite weeknight go-to meal is "leftover salad" -- take whatever leftover meats and vegetables we have and throw them together with some spinach. Serves two purposes -- clean out the fridge and have a quick and healthy meal!
