Banana bread is one of those baked goods that serves multiple purposes. It can be consumed at breakfast with coffee, for dessert, or even as a snack. Watch Good Bite host Gaby Dalkin demonstrate a quick and easy version of this mainstay.
Banana Bread
1/2 cup sugar
1/2 cup brown sugar
2 cups flour
1/4 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
4 very ripe bananas
6 tablespoons melted unsalted butter
1/4 cup plain yogurt
2 eggs beaten
1 1/2 teaspoon vanilla
1 1/4 cup toasted walnuts, chopped
1 cup mini chocolate chips (optional)
Preheat oven to 350 degrees. Grease bottom only of regular loaf pan, or grease and flour bottom and sides of nonstick 8x4 inch loaf pan; set aside. Combine butter and yogurt in mixer. Add brown sugar and white sugar; mix. Add eggs, one at a time, and vanilla; mix. Add bananas; mix. Add flour, cinnamon, baking soda, and salt and mix. Add in chocolate chips and walnuts if desired. Batter will be lumpy.
Bake in prepared loaf pan until a toothpick stuck in the center of the loaf comes out clean, 50 to 55 minutes. Let cool for 20 minutes. Slice and serve.
