Cakes exist in all shapes, sizes, flavors, but perhaps the most comforting bite comes from a straight up chocolate or vanilla layer cake. Super simple to throw together, this chocolate cake with chocolate frosting is a great rendition of the classic cake. How do you enjoy your cake?
Chocolate Cake with Frosting
Cake
1 cup plus 2 tablespoons cocoa powder
1 1/2 cups butter, room temperature
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup plus 2 tablespoons packed brown sugar
4 eggs, room temperature
1 cup boiling water
1 tablespoon vanilla
Frosting
12 ounces mini chocolate chips
1 cup half and half
For the cake: Preheat oven to 350 degrees. Set oven rack in center of oven. Grease and flour two 9 inch round pans, set aside.
Mix boiling water with cocoa powder, set aside to cool. In a mixer, cream together butter, brown sugar, and white sugar. Beat in eggs, one at a time, and vanilla, being sure to scrape the sides of the bowl with rubber spatula as necessary. Add cocoa mixture and combine. Add flour, baking soda, and salt; mix thoroughly to combine. Scrape down sides of bowl with a rubber spatula. Mix at medium speed until batter is fluffy. Pour batter into prepared pans, gently spread to the edges and smooth the top. Bake 20 –30 minutes, or until a wooden pick inserted in the center comes out clean. Let cool on a rack 5 to 10 minutes before removing from pan. Let cool completely before frosting.
For the frosting: In a medium glass bowl heat half and half in microwave until very hot,
but not boiling. Stir in chocolate chips until totally melted and thoroughly combined. Cover with plastic wrap and chill in refrigerator 45 minutes. Using an electric mixer whip on high speed until light and fluffy, about five minutes.
