When I think about French toast, I think about leisurely weekend breakfasts, because hey, who has time to cook French toast on a week day? But actually, home-made French toast is really not complicated, check out the above video for a quick and easy recipe.
French Toast
7 eggs
2 1/2 cups whole milk
2 tablespoons butter, melted, plus additional for cooking
1/4 cup brown sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon salt
1/4 teaspoon ground nutmeg
8 -1 1/2-2 inch thick slices French or Hearty white bread
Preheat oven to 350 degrees.
Whisk first eight ingredients in medium bowl then pour into two13x9 inch baking dishes or one large jelly roll pan. Add bread to egg mixture and let soak 15 minutes, pressing down occasionally and flipping over once.
Melt 2 tablespoons butter in heavy large skillet over medium heat. Working in batches, add bread to skillet. Cook until golden brown on both sides, adding more butter as needed, about 3 minutes. Transfer to baking sheet. Bake until bread puffs up and is firm in the middle, about 30 minutes. Serve warm with maple syrup.
Variation: Replace one cup of whole milk with heavy cream. Before serving, sprinkle with mixture of 2 tablespoons sugar and 1 teaspoon cinnamon. Serve with fresh berries and whipped cream.
