Who doesn't love this traditional south of the border dip? My mother's best friend currently resides in Mexico City and when I was younger I would travel there and visit her kids who were my age. I remember avocados on the table at every meal, and each diner would mash up his/her own guacamole tableside. In Mexico guac is made simply with avocado, lime, and salt, coarsely mashed together and used on quesadillas, on tortillas, and frankly consumed straight up as is. Whenever I make guac at home I add extra lime juice, and then the requisite salt and avocado. I also like to add cilantro, but nothing else. Simple simple simple. There are a million ways to recreate this classic party appetizer, what's your top guacamole recipe? Feel free to share in the comments.
Guacamole
3 soft, ripe avocados
3 tablespoons cilantro, finely chopped
Juice of 1/2 a lime
1 Serrano or Jalapeno pepper
1/2 teaspoon salt
1 tomato, chopped (optional)
1 small white onion, chopped (optional)
Cut avocados in half and scoop flesh into bowl. Add chopped cilantro, lime juice and salt. Mash avocados with a fork until creamy with some small chunks remaining.
Remove stem and seeds from pepper and chop fine. Add pepper to taste.
Taste and adjust salt and lime to your liking. Stir in any optional ingredients you desire. Serve with tortilla chips or with tacos.
