Mac and Cheese
4 tablespoons of butter plus more for buttering the baking dish
1/4 cup breadcrumbs
3 cups milk
1/4 cup flour
1 1/2 teaspoons salt
1 teaspoon dry mustard powder
1/4 teaspoon cayenne
2 1/4 cups sharp cheddar cheese, grated
1 cup jack cheese, grated
1/4 cup parmesan cheese, grated
1/2 pound elbow macaroni
Preheat oven to 375 degrees. Butter an 8 x 8 inch baking pan. Warm milk in a small saucepan. In a 3 quart pot, melt 3 tablespoons butter. Add flour to melted butter and stir constantly for about a minute. Slowly add hot milk to butter mixture stirring constantly until mixture thickens, about 10 minutes. Remove from heat and add salt, mustard powder, cayenne 1 3/4 cups of cheddar cheese and 1 cup jack cheese. Cook the macaroni for 3 minutes and drain. Toss macaroni with cheese sauce and transfer to buttered baking pan. Melt remaining tablespoons of butter and toss with bread crumbs, parmesan the remaining cheddar cheese. Sprinkle over the macaroni and place in oven. Bake until brown and bubbling, about 30 minutes.
Variation:
Toss 1 cup of peas, chopped tomato or ham into the cheese sauce with the macaroni before baking.
