Nothing reminds us of our childhood more than a sweet and perfectly simple sugar cookie. It has just enough sweetness to quench your dessert craving, and is the perfect cookie for decorating and creating fun shapes. So, ready for the easiest cookie you're ever going to make? Gaby Dalkin of whatsgabycooking.com shares her favorite recipe!
Ingredients:
2 1/2 cups all purpose flour
1/2 cup corn starch
1/2 teaspoon salt
1 teaspoon baking powder
1 cup butter, softened
1 cup sugar plus 3/4 cups sugar
2 tablespoons light brown sugar
2 eggs
2 teaspoons vanilla
Preparation:
With an electric mixer cream butter, 1 cup sugar and brown sugar until fluffy in a large bowl. Add eggs one at a time until thoroughly combined. Add vanilla and mix until incorporated.
Add flour, cornstarch, baking powder, and salt and mix until combined, occasionally scraping down sides of the bowl.
Cover bowl and refrigerate until firm, about two hours.
Preheat oven to 350 degrees. Set oven rack in center of oven. Line a baking sheet with parchment paper. Fill a small bowl with remaining 3/4 cup sugar.
Roll rounded tablespoons of dough into balls then in sugar until evenly coated. Place each ball on lined baking sheet and, if desired, press to flatten into 1/4 inch thick discs with the bottom of a glass. Use flour or parchment to keep the glass from sticking to the dough.
Bake for 15-18 minutes or until golden around edges.
Variations:
Roll dough in cinnamon and sugar before baking. –or-
Replace vanilla extract with almond extract, coconut extract or lemon extract –or-
Working in small batches, (keeping the rest of the dough refrigerated) roll dough out on a floured work surface to 1/4 inch thickness and use cutters to cut it into fun shapes.
